Seared Prime Ribeye Roast

Ingredients

  • 5 lbs Beef Prime Rib
  • 1 1/2 teaspoons Sea salt
  • 2 teaspoons Black pepper, freshly ground
  • 2 teaspoons Rosemary, fresh
  • 1 teaspoon Thyme, fresh
  • 8 cloves Garlic, minced
  • 1/4 cup Olive oil

Instructions

  1. Preheat your grill on high for about 15 minutes and preheat your oven to 325°F.
  2. In a bowl, mix together 1 ½ teaspoons of sea salt, black pepper, fresh rosemary, thyme, minced garlic, and olive oil.
  3. Pat the beef prime rib with paper towels. Sprinkle the seasoning mixture over it, rubbing it onto all sides.
  4. When the grill is ready, sear the prime rib for 2-5 minutes per side until charred (depending on the grill's heat). Then transfer to the preheated oven and continue cooking until desired level of doneness.
  5. Use a meat thermometer to check the temperature of the meat: Rare (120°F), Medium Rare (130°F), Medium (140°F), Medium Well (150°F). The meat will continue to cook as it rests, so remove it from the oven 5-10 degrees before reaching your optimal temperature.
  6. Remove prime rib from the oven and tent it with foil. Allow it to rest for 30 minutes before carving.
  7. Carve the prime rib roast by slicing against the grain into about ½ inch thick slices.
