Seared Prime Ribeye Roast

Ingredients
- 5 lbs Beef Prime Rib
- 1 1/2 teaspoons Sea salt
- 2 teaspoons Black pepper, freshly ground
- 2 teaspoons Rosemary, fresh
- 1 teaspoon Thyme, fresh
- 8 cloves Garlic, minced
- 1/4 cup Olive oil
Instructions
- Preheat your grill on high for about 15 minutes and preheat your oven to 325°F.
- In a bowl, mix together 1 ½ teaspoons of sea salt, black pepper, fresh rosemary, thyme, minced garlic, and olive oil.
- Pat the beef prime rib with paper towels. Sprinkle the seasoning mixture over it, rubbing it onto all sides.
- When the grill is ready, sear the prime rib for 2-5 minutes per side until charred (depending on the grill's heat). Then transfer to the preheated oven and continue cooking until desired level of doneness.
- Use a meat thermometer to check the temperature of the meat: Rare (120°F), Medium Rare (130°F), Medium (140°F), Medium Well (150°F). The meat will continue to cook as it rests, so remove it from the oven 5-10 degrees before reaching your optimal temperature.
- Remove prime rib from the oven and tent it with foil. Allow it to rest for 30 minutes before carving.
- Carve the prime rib roast by slicing against the grain into about ½ inch thick slices.
