Shepherd's Pie

Ingredients

  • 1 1/2 pounds Russet potatoes
  • 1/4 cup Half-and-half
  • 2 ounces Unsalted butter
  • 3/4 teaspoon Kosher salt
  • 1/4 teaspoon Freshly ground black pepper
  • 1 Egg yolk
  • 2 tablespoons Canola oil
  • 1 cup Onion, chopped
  • 2 Carrots, peeled and diced small
  • 2 cloves Garlic, minced
  • 2 tablespoons All-purpose flour
  • 2 teaspoons Tomato paste
  • 1 cup Chicken broth
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoons Freshly chopped rosemary leaves
  • 1 teaspoon Freshly chopped thyme leaves
  • 1/2 cup Fresh or frozen corn kernels
  • 1/2 cup Fresh or frozen English peas

Instructions

  1. Peel and cut the russet potatoes into 1/2-inch dice. Place in a medium saucepan, cover with cold water, and bring to a boil. Simmer until tender, about 10 to 15 minutes. In a microwave-safe container, warm the half-and-half and butter. Drain the potatoes and mash, then add half-and-half, butter, salt, pepper, and egg yolk. Stir until smooth.
  2. Preheat the oven to 400 degrees F.
  3. In a 12-inch sauté pan over medium-high heat, sauté chopped onion and diced carrots until they begin to take on color, about 3 to 4 minutes. Add minced garlic and stir. Add ground lamb (or beef), salt, and pepper. Cook until browned and cooked through, about 3 minutes.
  4. Sprinkle the meat with flour, toss to coat, and cook for another minute. Add tomato paste, chicken broth, Worcestershire, rosemary, thyme, and stir. Bring to a boil, reduce heat, cover, and simmer for 10 to 12 minutes or until the sauce is slightly thickened.
  5. Add corn and peas to the meat mixture. Spread evenly in an 11 by 7-inch glass baking dish. Top with mashed potatoes, starting around the edges to create a seal. Smooth with a rubber spatula. Place on a parchment-lined half sheet pan in the oven and bake for 25 minutes or until the potatoes begin to brown.
  6. Remove to a cooling rack for at least 15 minutes before serving.

Notes

  • Shepherd's Pie, a comforting British dish, features a savory lamb (or beef) filling topped with creamy mashed potatoes. Allow the pie to cool for optimal serving.
