Marinated London Broil

Ingredients

  • 1/2 cup Shallots, chopped
  • 1/4 cup Low-sodium soy sauce
  • 3 tablespoons Fresh lemon juice
  • 3 tablespoons Balsamic vinegar
  • 1 tablespoon Olive oil
  • 2 teaspoons Fresh thyme
  • 1 teaspoon Dried oregano
  • 4 Garlic cloves, minced
  • 2 pounds Boneless top round steak, trimmed
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper, freshly ground

Instructions

  1. Combine chopped shallots, low-sodium soy sauce, fresh lemon juice, balsamic vinegar, olive oil, fresh thyme, dried oregano, and minced garlic in a large zip-top plastic bag.
  2. Pierce the top round steak with a fork. Add the steak to the bag, seal, and marinate in the refrigerator for 2 hours, turning every 30 minutes.
  3. Preheat the broiler.
  4. Remove the steak from the bag and discard the marinade. Scrape shallots and garlic from the steak, discarding them. Place the steak on a broiler pan coated with a thin layer of olive oil.
  5. Sprinkle the steak evenly with salt and freshly ground black pepper. Broil 4 inches from heat for 6 minutes on each side or until the desired degree of doneness.
  6. Let the steak stand for 10 minutes before slicing against the grain.
