Ingredients

  • 3 medium Baking Potatoes
  • 2 tablespoons Lemon Juice
  • 2 teaspoons Olive Oil
  • 1 teaspoon Dried Oregano
  • 1/4 teaspoon Pepper
  • 1/4 teaspoon Salt
  • 2 cloves, minced Garlic
  • Vegetable Oil Cooking Spray

Instructions

  1. Cut each potato lengthwise into 8 wedges.
  2. In a large bowl, combine lemon juice, olive oil, dried oregano, pepper, salt, and minced garlic.
  3. Add the potato wedges to the bowl and toss well to coat.
  4. Place the coated potatoes, skin side down, on a baking sheet that has been coated with vegetable oil cooking spray.
  5. Bake at 400 degrees for 45 minutes or until the potatoes are tender and lightly browned.
