- 3 medium Baking Potatoes
- 2 tablespoons Lemon Juice
- 2 teaspoons Olive Oil
- 1 teaspoon Dried Oregano
- 1/4 teaspoon Pepper
- 1/4 teaspoon Salt
- 2 cloves, minced Garlic
- Vegetable Oil Cooking Spray
Instructions
- Cut each potato lengthwise into 8 wedges.
- In a large bowl, combine lemon juice, olive oil, dried oregano, pepper, salt, and minced garlic.
- Add the potato wedges to the bowl and toss well to coat.
- Place the coated potatoes, skin side down, on a baking sheet that has been coated with vegetable oil cooking spray.
- Bake at 400 degrees for 45 minutes or until the potatoes are tender and lightly browned.
