- 3 tablespoons Unsalted butter
- 4 tablespoons All-purpose flour
- 1 tablespoon Curry powder
- 1 tablespoon Garam masala
- 1/4 teaspoon Cayenne pepper (optional)
Instructions
- In a small saucepan, melt the butter over medium-low heat.
- Once the butter is fully melted, add the flour and stir continuously to combine. The mixture will puff up; continue stirring to prevent burning. Cook for an additional 5-15 minutes until the roux takes on a nutty aroma and turns golden brown.
- When the roux reaches a nutty aroma and golden brown color, add the curry powder, garam masala, and optionally cayenne pepper.
- Cook and stir for 30 seconds, then remove from heat. If not used immediately, let it cool in an airtight container and store in the refrigerator for up to a month or in the freezer for 3-4 months.
