Curry Roux

Ingredients

  • 3 tablespoons Unsalted butter
  • 4 tablespoons All-purpose flour
  • 1 tablespoon Curry powder
  • 1 tablespoon Garam masala
  • 1/4 teaspoon Cayenne pepper (optional)

Instructions

  1. In a small saucepan, melt the butter over medium-low heat.
  2. Once the butter is fully melted, add the flour and stir continuously to combine. The mixture will puff up; continue stirring to prevent burning. Cook for an additional 5-15 minutes until the roux takes on a nutty aroma and turns golden brown.
  3. When the roux reaches a nutty aroma and golden brown color, add the curry powder, garam masala, and optionally cayenne pepper.
  4. Cook and stir for 30 seconds, then remove from heat. If not used immediately, let it cool in an airtight container and store in the refrigerator for up to a month or in the freezer for 3-4 months.
