Herb Basted Chicken Breasts

Ingredients

  • 3 tablespoons Olive oil
  • 1 tablespoon onion, minced
  • 1 clove garlic, minced
  • 1 tablespoon Italian herb seasoning
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Ground black pepper
  • 1/8 teaspoon Hot pepper sauce
  • 4 Bone-in chicken breast halves, with skin
  • 1 1/2 tablespoons Chopped fresh parsley

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, prepare the herb sauce by combining olive oil, minced onion, minced garlic, Italian herb seasoning, salt, black pepper, and hot pepper sauce.
  3. Heat olive oil in a cast iron pan over medium-high. Pat chicken breasts dry and season with salt and pepper. Sear chicken breasts, skin side down for 3-4 minutes, until golden brown. Flip and pour herb sauce over the chicken, then transfer to oven.
  4. Roast at 375°F (190°C) for about 35 to 45 minutes, until chicken reads 165°F (74°C). Basting occasionally with pan drippings.
  5. Remove to a warm platter, spoon pan juices over, and sprinkle with chopped fresh parsley.
