- 3 tablespoons Olive oil
- 1 tablespoon onion, minced
- 1 clove garlic, minced
- 1 tablespoon Italian herb seasoning
- 1/2 teaspoon Salt
- 1/2 teaspoon Ground black pepper
- 1/8 teaspoon Hot pepper sauce
- 4 Bone-in chicken breast halves, with skin
- 1 1/2 tablespoons Chopped fresh parsley
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, prepare the herb sauce by combining olive oil, minced onion, minced garlic, Italian herb seasoning, salt, black pepper, and hot pepper sauce.
- Heat olive oil in a cast iron pan over medium-high. Pat chicken breasts dry and season with salt and pepper. Sear chicken breasts, skin side down for 3-4 minutes, until golden brown. Flip and pour herb sauce over the chicken, then transfer to oven.
- Roast at 375°F (190°C) for about 35 to 45 minutes, until chicken reads 165°F (74°C). Basting occasionally with pan drippings.
- Remove to a warm platter, spoon pan juices over, and sprinkle with chopped fresh parsley.
