- 3 Chicken breasts or thighs
- 1 Medium onion
- Lime
- 3 Bell peppers (Red, Yellow, Green, or Orange)
- 3 tablespoons Olive oil, divided
- 1 teaspoon Chili powder
- 1/2 teaspoon Smoked paprika
- 1/2 teaspoon Onion powder
- 1/2 teaspoon Black pepper
- 1/2 teaspoon Cumin
- To taste Salt
- Cornstarch (for Fajita Seasoning)
- Sugar (for Fajita Seasoning)
- Chicken broth (for Fajita Seasoning)
- Garlic powder (for Fajita Seasoning)
- Cayenne powder (for Fajita Seasoning)
- Fajita Seasoning (see instructions for details)
Instructions
- Cut the onion into slivers and slice the bell peppers.
- In a separate bowl, combine 1 tablespoon of olive oil, juice of ½ lime, chili powder, smoked paprika, onion powder, black pepper, cumin, and salt.
- Cut the chicken into strips and toss with the spice mixture.
- Preheat 1 tablespoon of olive oil over medium-high heat. Add half of the chicken and cook until just cooked, about 3-5 minutes. Remove from the pan and set aside. Repeat with the remaining chicken.
- Set the chicken aside and add 1 tablespoon of oil to the pan. Cook the onions for 2 minutes. Add in sliced peppers and cook an additional 2 minutes or just until hot. Add the chicken back to the pan and stir to combine.
- Squeeze additional lime over the top and serve over tortillas.
- For the Fajita Seasoning: Mix cornstarch, chili powder, salt, paprika, sugar, chicken broth, garlic powder, cayenne powder, and cumin in a bowl. Use 1 tablespoon of the seasoning per pound of meat.
