Cajun Chicken

Ingredients

  • 1/3 cup Vegetable oil
  • 1-1/4 teaspoons Cajun seasoning
  • 1-1/4 teaspoons Dried Italian-style seasoning
  • To taste Garlic powder
  • 1-1/4 teaspoons Lemon pepper
  • 2 Skinless, boneless chicken breast halves - pounded to 1/2 inch thickness

Instructions

  1. In a large shallow dish, mix the oil, Cajun seasoning, Italian seasoning, garlic powder, and lemon pepper. Place the chicken in the dish, and turn to coat with the mixture. Cover, and refrigerate for 1/2 hour.
  2. Preheat the grill for high heat.
  3. Lightly oil the grill grate. Drain the chicken, and discard the marinade. Place the chicken on the hot grill and cook for 6 to 8 minutes on each side, or until juices run clear.

Notes

  • These spicy Cajun-style grilled chicken breasts are delicious served hot or cold, sliced on Caesar salad, or made into sandwiches.
