Ingredients

  • 1 cup Almond flour
  • 1/2 teaspoon Baking powder
  • 1/8 teaspoon Salt
  • 1/3 cup Banana, mashed
  • 1/2 teaspoon Vanilla extract
  • 1/4 cup Chocolate chips
  • 1-2 teaspoons Maple syrup (optional)

Instructions

  1. Preheat oven to 325ºF (165ºC) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine almond flour, baking powder, and salt. Set aside.
  3. Add the mashed banana, vanilla extract, and optional maple syrup to the dry ingredients. Stir until well combined.
  4. Fold in the chocolate chips.
  5. Drop spoonfuls of dough onto the prepared baking sheet and flatten to the desired thickness (they do not spread much in the oven). This recipe should yield 12 cookies.
  6. Bake in the preheated oven for about 13-15 minutes until the tops look lightly toasted.
  7. Cool the cookies for 10 minutes on the baking sheet before transferring them to a wire rack to cool completely.
