Almond Flour Banana Cookies

Ingredients
- 1 cup Almond flour
- 1/2 teaspoon Baking powder
- 1/8 teaspoon Salt
- 1/3 cup Banana, mashed
- 1/2 teaspoon Vanilla extract
- 1/4 cup Chocolate chips
- 1-2 teaspoons Maple syrup (optional)
Instructions
- Preheat oven to 325ºF (165ºC) and line a baking sheet with parchment paper.
- In a medium bowl, combine almond flour, baking powder, and salt. Set aside.
- Add the mashed banana, vanilla extract, and optional maple syrup to the dry ingredients. Stir until well combined.
- Fold in the chocolate chips.
- Drop spoonfuls of dough onto the prepared baking sheet and flatten to the desired thickness (they do not spread much in the oven). This recipe should yield 12 cookies.
- Bake in the preheated oven for about 13-15 minutes until the tops look lightly toasted.
- Cool the cookies for 10 minutes on the baking sheet before transferring them to a wire rack to cool completely.
